François Xavier used to run a famous Chinon estate for many years. He got the possibility with a close friend in St. Nicolas de Bourgueil to create his own venture. He started in early 2010 with the complicity of several producers in the Loire: St. Nicolas de Bourgueil, Bourgueil, Chinon, Saumur, and Touraine. Thanks to the deep and trustful relationship, he has been able to select the best plots and picked the best grapes.

Vinification is traditional. Just a good sense of capturing the fruitiness of those wines and getting soft and round tannins. By harvesting ripe and using drastic cultural methods, he was able to get the highest quality grapes.

François brought modern methods with traditional techniques.

Results are a truly boutique negociant. Thanks to that flexibility, he can adapt his portfolio by having different wines and sources. He won’t produce more if no quality if found, even if demand grows.

A limpid dress, with pretty aromas of white flowers and citrus fruits. The mouth is long marked by acidity, freshness and a good length for immediate pleasure.

Terroir: The plots are located on clay and limestone soil which enables the development of fine and fruity wines with a mineral note on the finish. The average age of the wines is 15 years.
Vinification: The alcoholic fermentation takes place slowly in a stainless-steel tank at a temperature of approximately 15 degrees Celsius. The wine is aged in a stainless-steel tank for a minimum of 6 months before bottling.

The limestone and flinty (silex in French) terroir of Vouvray offers great advantages for producing fine, well-balanced complex Chenin Blanc wine. Hand harvested, this wine is fermented and then aged in 400 litre French oak barels for around 8 months. This Vouvray expresses lovely notes of white flowers that create a great sensation on the palate: dry but with a particular richness.

This wine has a beautiful ruby ​​color with purple reflections and a nose of ripe red fruits. In the mouth, a supple and fine substance with a warm finish brings a good length. This Chinon goes wonderfully with cold starters, roast pork, hamburgers, chicken curry or even turkey with morels.

Terroir: The plots are located on terroirs of gravel which provides a warming of the soil. This wine therefore offers a pleasant softness on the nose as well as in the mouth. The average age of the wine is 35 years.
Vinification: The grapes are harvested at optimal maturity, then they are destemmed and sorted. After a few days of maceration, the alcoholic fermentation starts naturally. After a minimum of 15 dats of vacuation, the grapes are pressed with a pneumatic press. Afterwards, the malolactic fermentation takes place naturally. The wine is then aged in stainless steel tank for a minimum of 12 months before bottling.

Vinification: The making of the wine begins with traditional vinification of red wines in a stainless-steel tank followed by aging in oak barrels for a minimum of 6 months. After that, this wine is aged in amphoras for 7 months to obtain a more greedy and generous appearance.
